Chicken Tamales

Everyone who knows my grandma also knows of her famous chicken tamales. When going through her recipes I came upon multiple written copies of this recipe... all a little different. So, which is the recipe of legend? I believe that I have been able to deduce the correct one here... if anyone sees anything missing, let me know. One thing they all had in common though was the first ingredient. :)

1 chicken, old & fat, cooked with 1 gallon of water and a dash of salt
1 bay leaf
1 or 2 red chili peppers
1 big tsp cumin seed
1 tbs coriander seed

chop boned chicken into small pieces. Take 3 qt broth and fat and 24 oz can tomato juice. Bring to boil and add cream of what and stir.
