Beef Stroganoff

2 lbs sirloin tip or burger (though I always remembered this as being made with canned meat.)
1 1/2 tbs MSG
1/2 tsp salt and pepper
6 tbs butter
1 can mushrooms
1/2 cup chopped onions
3 tsp garlic
3/4 cup beef broth
1 cup sour cream

*a note at the bottom of the card says "almonds".

Chicken Italian Style

Brown chicken on grill, using salt and pepper to season it.
Put chicken in a baking pan, cover with a sauce made of:

1 can tomato soup
1 onion chopped
1 tsp oregano
1 tsp garlic powder

Bake, when almost done you can take some green peppers, sliced in long slivers and put in chicken mixture and then finish baking.

Eggs Monterey

6 eggs
1/2 cup milk
1 tsp Lawry's seasoning salt
1/2 tsp pepper
2 tbs chopped green chilies
3/4 cup grated Monterrey jack cheese
4 slices white bread
2 tbs butter

Combine eggs, milk, salt, pepper and chilies. Beat lightly, add cheese. Spread bread with butter and cut in 1/2 to make triangles. Arrange bread butter side down around edge of 9 inch pie plate so points stand up. Place remaining bread in bottom of pan butter side down. Pour in egg mixture. Bake at 350 degrees for 30 minutes. Cut into wedges to serve.

Heavenly Hash

Mix together following ingredients:
2 cups cold cooked rice
2 cups mini marshmallows
1 2/3 cup or 13.5 oz can pineapple tidbits
1/2 cup maraschino cherries
1/4 cup sliced almonds, toasted

1 cup heavy cream, whipped
1/4 cup sugar
1 tsp vanilla

Add sugar gradually to whipped cream and vanilla then fold into rice mixture.

Oriental Pepper Steak

Cut steaks into thin strips and brown the steak.
Put in pan with oil, onions and celery - when almost done add ground pepper. Cover with water, soy sauce, chicken soup base and the following:
1 tbs msg
garlic to taste
Thicken mixture slightly with cornstarch and serve over Chinese noodles.

Potato Goop

I can only guess at what this recipe was supposed to be. There were 3 separate cards written for this particular recipe, including a scrap piece of paper. 1 of the recipes looks like Grandpa Hughes's handwriting. None of them actually call for potatoes. Maybe something to put on top of the potatoes?? Mix in with mashed potatoes? Any ideas?

3/4 lbs Nucoa (margarine)

grated American cheese

Recipe #2
3 pkgs margarine
4 pkgs butter
green onions
cheese grated
2 pts sour cream

Recipe #3
3 pkg margarine
4 trays butter
green onions chopped fine
grated cheddar cheese - 1 lb
1 pt sour cream
-the last recipe was signed "Winnie"

Zucchini Corn Casserole

2 lbs cooked and sliced zucchini
1 lb whole kernel corn, drained
2 eggs, beaten
1 chopped onion
1/2 lb cheddar cheese

Mix eggs, corn, onion and zucchini, add half of the cheese and mix well. Pour into casserole dish and sprinkle rest of the cheese on top. Bake at 350 degrees for 30 to 40 minutes.

Stuffed Zucchini

3 small zucchini
1/2 lb ground beef
1/4 cup mayonnaise
2 tsp onion
2 tsp parsley flakes
1 tsp oregano leaves
1 tsp salt
1 tsp lemon juice
pepper
2/3 cup spaghetti sauce

Cut zucchini in half, scoop out center leaving 1/4 in shell. Chop zucchini centers and mix with the rest of the ingredients. Spoon into shells and top with sauce. Bake at 350 degrees for 30 minutes.

Chicken Tamales

Everyone who knows my grandma also knows of her famous chicken tamales. When going through her recipes I came upon multiple written copies of this recipe... all a little different. So, which is the recipe of legend? I believe that I have been able to deduce the correct one here... if anyone sees anything missing, let me know. One thing they all had in common though was the first ingredient. :)

1 chicken, old & fat, cooked with 1 gallon of water and a dash of salt
1 bay leaf
1 or 2 red chili peppers
1 big tsp cumin seed
1 tbs coriander seed

chop boned chicken into small pieces. Take 3 qt broth and fat and 24 oz can tomato juice. Bring to boil and add cream of what and stir.

Salmon Loaf

2 cans salmon
Bread - broken
1/2 cup instant potatoes
2 eggs
1 tsp dried ? (oregano)
1 tsp sage
1/2 cup chopped onion
1 1/2 cup warm milk
salt and pepper

Mix together and bake in greased pan @ 350 degrees (no time given)

Grandpa's Pickles

This is the recipe as I remember it. I found many pickle recipes in grandmas recipe box. Strangely, not a single one was the famous recipe of Grandpa Hughes' Dill Pickles. It has been many years since I last made a batch of pickles, and even longer since I stood at grandma's kitchen sink, stuffing pickle jars full of cukes, helping grandpa to prepare the ingredients and then finally, watching him measure precisely the amount of pickling salt onto each jar for sealing. Whether or not the pickles really need to be shaken for forty days and forty nights needs to be seen, but I will keep on the tradition by putting it in the instructions, just like grandpa taught me.

Wash and cut stems off medium and small sized pickling cukes.
In washed 1 qt jars place a layer of the cukes so they fill 1/2 of the jar.
Into the jar place: 2 clove pieces of garlic
1 dried red pepper corn (2 for hot)
1 head of dill*

Fill up the rest of the jar with pickles. Pour 1 and 1/2 tbsp pickling salt in each jar. Fill up jar with cold water for pickles are covered. Seal jar.

Shake the jars twice a day for forty days and forty nights.

*I often put in more dill than 1 head. I would often go behind grandpa and slip in another before he sealed the jars.

Bread and Butter Pickles

Note on cards says "Ellens"

  • 6 qts cukes, sliced
  • 2 green peppers
  • 2 red peppers
  • 12 medium onions sliced
  • salt.
Brine 3 hours and drain

Mix together:
  • 1/4 cup mustard seed
  • 2 tsp celery seed
  • 3 tsp turmeric powder
  • 4 1/2 cups white sugar
  • 1 1/2 qts vinegar
Add above ingredients together, bring to a boil. Cook slowly for 10 minutes. Seal.

Puffs Yellow Pickles

  • Yellow cucumbers cut 1/2 wide
  • 2 cups vinegar
  • 1 cup water
  • 1 cup sugar
  • 1 tsp mustard seed
  • 1 tsp mixed pickling spice
Boil three minutes to each pint add 1 tsp salt and 1/4 sliced onion.

Ice Box Cookies

  • 3 cups white sugar
  • 1 cup brown sugar
  • 2 cups shortening - use 1/2 butter if desired
  • 3 eggs beaten
  • 4 cups sifted flour
  • 2 tsp baking powder
  • 1 tsp soda
  • 1/2 tsp salt
  • 1 1/2 tsp vanilla
Mix ingredients together. Chill.

Never Fail Meringe

Combine:
  • 2 tbsps sugar
  • 1 tbsp cornstarch
  • 1/2 cup water
Cook until clear and thick. Set aside to cool.

Beat 2 egg whites with:
  • 1/8 tsp salt
  • 1/2 tsp vanilla
until soft mounds form. Add 6 tbsps sugar, one at a time, beating after each addition. Add cornstarch mixture and continue heating til meringue stands in stiff peaks and stays separated when spatula is drawn between. Bake at 350 degrees for 12 to 15 minutes.

Plum Pudding

This recipe card had the notation "from the kitchen of great grandmother Harrison, this recipe came from England with her."

  • 1 lb ground potatoes
  • 1 lb ground carrots
  • 1 lb ground raisins
  • 1 lb plain raisins or currants
  • 1 lb sugar
  • 1 lb flour
  • pinch of salt
Mix well and seal. Pressure cook 60 minutes at 10 or 15 lbs pressure.

Crazy Cake

  • 2 cups flour
  • 2 cups sugar
  • 6 tbs cocoa
  • 2 tsp soda
  • 1/4 tsp salt
Mix together then add:
  • 10 tbs Wesson oil
  • 2 tbs vinegar
  • 1 tbs vanilla
  • 2 cups warm water
Mix in pan and bake at 325 degrees for 35 to 40 minutes.

Butterless, Eggless, Milkless Cake

  • 1 cup light brown sugar packed
  • 1 cup boiling water
  • 1/3 cup lard
  • 1 cup raisins
  • 1 1/2 sifted flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp nutmeg
  • 1 tsp cinnamon
  • 1/8 tsp cloves
  • 1/4 tsp ginger
  • 1/4 tsp allspice
  • 1/2 tsp salt
  • 1/2 tsp vanilla
Boil sugar, water, lard, raisins about 3 minutes until sugar is dissolved. Cool and add dry mixture and vanilla. Bake in medium oven 40 minutes.

Chocolate Chip Cake

Sift together in a large bowl:
  • 1 1/2 cups sifted cake flour
  • 2 tsps double action baking powder (3 tsps single action)
  • 1/2 tsp salt
  • 1 cup sugar
Then add:
  • 1/2 cup Snowdrift (aka shortening)
  • 1/2 cup milk
Mix enough to dampen flour. Beat for two minutes with electric mixer at "low speed".

Add:
  • 2 eggs, unbeaten
  • 1/2 cup coarsely grated baking unsweetened chocolate
  • 1/2 cup chopped nuts

Mayonnaise

1 egg yolk
1/4 tsp salt
2 or 3 tsp of lemon juice or vinegar
dash of cayenne pepper
1 cup oil
1 tsp Worcestershire sauce

Stir with fork until very thick and add few drops of oil and stir. Add more oil a few drops at a time until mixture balls on fork. Thin with lemon juice or vinegar. Add more ail until 1 cup of oil is used.

Freezer Corn

8 cups corn
1 tbsp sugar
1 cup water
1/4 tsp salt
1 cube butter

Cook all ingredients until melted and simmer for 3 minutes.

Green Pepper Jelly

3/4 cup ground green pepper
1/2 cup jalapeno
1 1/2 cup white vinegar
6 cup sugar

Put all ingredients into a blender and mix well. Put into saucepan and bring to a rapid boil 5 -10 minutes. Drain liquid, boil again.

Add green food coloring. Good on top of cream cheese and wheat thins.

For a hotter jelly change to 1 cup jalapeno and 1 cup green pepper

Pickled Crab Apples

4 lbs crab apples
6 cups sugar
4 cups vinegar
2 cups water
4 tbsp whole cloves
1 tbsp whole allspice
2 tbsp stick cinnamon, broken into pieces

Select ripe, firm crab apples, uniform in size. Wash, remove blossom ends but not stems. Prick skins well with a fork. Combine sugar, vinegar, water and heat to boiling. Add spice tied loosely in cheese cloth bag and boil 5 minutes. Add apples, a few at a time. Simmer gently until tender, being careful not to burst the fruit. Pack while hot into sterilized, hot jars, covering fruit with syrup. Seal at once.

Zucchini Relish

Grind:
10 cups zucchini
4 cups onion
5 tbsp salt

Let stand overnight. Rinse with cold water and squeeze out excess moisture.

Grind:
1 red and 1 green pepper
add 2 1/4 cups vinegar and 5 cups sugar, 1 tsp nutmeg, 1 tsp celery seed, 1 tsp dry mustard, 1 tsp black pepper and 1 tsp turmeric. Mix everything together and cook over medium heat for 30 minutes. Jar and seal.

Heavenly Jam

1 qt strawberries
1 (1 lb 4 1/2 oz) can crushed pineapple drained
2 tbsp lemon juice
2 or 3 tbsp grated orange peel
1 pkg powdered fruit pectin
5 cups sugar

Crush strawberries into large kettle, stir in remaining ingredients except sugar. Bring mixture to a boil then add sugar. Place over high heat and bring to a full rolling boil. Boil hard for one minute. Remove from heat, stir and cool 5 minutes. Put into jars and seal.

Yum - Yum Salad

1 pkg lime jello
1 cup chopped marshmallows
1 cup boiling water
1/2 cup chopped nuts
1 cup crushed pineapple
1/2 cup mayonnaise

Stir until mixed well and put in refrigerator until it starts to jell. Add:

1 cup shredded cabbage
1 cup whipped cream*

*you may use condensed milk instead of cream

Tomato, Strawberry Pinapple Jam

Combine in large kettle:

5 cups peeled, cut up ripe tomatoes
2 1/2 cups crushed pineapple, fruit and juice
4 1/4 cup sugar

Stir well and boil for 30 minutes. Remove from heat and add 1 large pkg strawberry jello with a splash of lemon juice. Seal into jars.

Peach Pineapple Conserve

3 lbs ripe peaches
1 can crushed pineapple (1lb 4 1/2 oz) not drained
2 lemons, sliced and quartered
7 cups sugar
2 pkgs orange flavored gelatin

Combine all ingredients but gelatin in a large saucepan. Bring to a boil and boil for 15 minutes. Remove from heat and add gelatin. Stir for 5 minutes.

Thousand Island Dressing

Thousand Island Dressing

3/4 cup Mayonnaise
Ketchup
2 tbsp Relish
1 1/2 cloves of garlic

Mix relish, mayo and garlic together. Add ketchup until good and pink.

Sipper

Sipper

5th of scotch
1 whole vanilla bean
3/4 ounces orange brandy liquor

Mix it all together and let it sit for three days

Caramel Icing

2 1/2 brown sugar
1 1/4 cups cream
1 tbsp butter
1 tsp vanilla

Cook slowly and constantly stirring brown sugar and cream until it forms a soft ball in water. Add 1 tbsp butter and 1 tsp vanilla. Beat until grainy and just right to spread.

Raisin Crispies

Raisin Crisps

1 1/2 cups all purpose flour
1 cup sugar
1/2 tsp baking soda
1 tsp cream of tartar
1/2 cup raisins - ground
1 egg

Shape into balls. Flatten with bottom of glass.

Welcome to my collection of my grandmother Winnie's recipes. After she passed away, I inherited her collection of many, many recipe boxes filled with her wonderful recipes. Many of them are hand-written, some of them are from my memory and yet I still know that there are more recipes out there of hers waiting to be discovered.

Please enjoy these recipes, share them with other family and friends of Winnie and submit more of her recipes for inclusion in this cookbook! My ultimate goal is to have these recipes published in a bound volume for all of the granddaughters, great granddaughters and great, great granddaughters of Winnie Hughes.
